Autumn’s Arrival: Tomato Soup Season Begins

So, as the leaves change and the days grow cooler, let’s cook heartwarming recipe of tomato soup, the quintessential comfort food of autumn.

Ingredients

1kg ripe tomatoes
Salt and pepper
A pinch of sugar
1 onion
1 carrot
2 garlic cloves
Oregano
600ml vegetable stock

Method

  1. Heat the oven to 200C and cut all the tomatoes up. Pour olive oil and season with salt, pepper and a pinch of sugar. Leave in the oven for 1 hour.
  2. While the tomatoes are in the oven, chop the onion, garlic and carrot carrot and gently fry until golden.
  3. Add the roasted tomatoes, oregano and the stock and stir.
  4. Blend with a mixer and leave to cook for another 30 minutes.
  5. Season to taste and serve
