No-Fuss Scone Recipe

Ingredients (Makes 8 medium scones)

• 225g self-raising flour (plus extra for dusting)

• 50g unsalted butter, chilled and cubed

• 25g caster sugar

• 150ml milk (plus a little extra for glazing)

• A pinch of salt

• Optional: handful of raisins or dried fruit

Method

1. Preheat your oven

Set it to 200°C (fan 180°C) / 400°F / Gas 6. Line a baking tray with parchment paper.

2. Mix the dry ingredients

In a large bowl, combine the flour, salt, and sugar. Add the cold butter and rub it in using your fingertips until the mixture resembles fine breadcrumbs.

3. Add the milk

Pour in the milk gradually, mixing with a butter knife or your hands until the dough just comes together. It should be soft but not sticky. If you’re adding fruit, fold it in now.

4. Shape and cut

Turn the dough onto a lightly floured surface. Pat it gently into a round about 2.5 cm thick. Use a cutter or a glass to cut out rounds. Avoid twisting the cutter—it helps the scones rise evenly.

5. Bake

Place the scones on your prepared tray. Brush the tops lightly with milk. Bake for 12–15 minutes, until risen and golden.

6. Serve

Cool slightly, then enjoy warm with butter, jam, or clotted cream—whatever suits your mood.
