Spice up your sandwiches or your salads with this delicious tomato chutney. It’s homemade, healthy and will give your lunch another kick. And that’s not all, this recipe is easy peasy and only requires 10 minutes preparation time.
Ingredients
1kg tomatoes
500g red onions
4 garlic cloves
4cm piece of ginger
1 grated apple
100g brown sugar
150ml red wine vinegar
10g mustard seeds
1 tsp paprika
1/2 tsp black pepper

Method
Chop up tomatoes, onions, garlic and ginger into small pieces. The smaller the better. Pop other ingredients into a bread maker or frying pan and then add the chopped items above.
Select the jam setting on bread maker machine. If using a frying pan, sizzle all ingredients for 1.5 hours on a low heat. 30 minutes into the cooking, you can add the grated apple into your bread maker or frying pan. This makes the chutney mixture more dense.
Whilst the chutney is cooking, you can start the jar sterilisation process. Pop four empty glass jars with lid on into a pan of boiling water, making sure the jars are upright. Once the jars start steaming, you can take them out.
Once the chutney has finished cooking, you can pour the mixture into the four jars, closing firmly with a lid. Pop the four jars back into boiling water and leave four 30 minutes. This will help the preservation of your chutney, which you can consume within eight weeks. Leave to cool and pop into a fridge for three hours.
The only thing left to do is to consume. Enjoy!
